Abstract:
PURPOSE: To prepare cakes having a flavor, taste, and bright color unique to stevia, by adding dried powder of stevia leaves.
CONSTITUTION: Dried powder of stevia leaves, which contain stevioside and stevioside A3 free from fading of chlorophyll and damaging of stevia flavor by fermentation, is added to raw materials for cakes together with other additives during the preparation step.
