Abstract:

PURPOSE: To provide cake with high fungal resistance and to improve the problem of environmental pollution and fire extremely, by spraying cakes on a conveyor passing through a spray box with alcoholic water, drying the cakes incompletely, storing the incompletely dried cakes in an airtight container, and reusing the excess alcoholic water in circulation.

CONSTITUTION: Cakes placed on a conveyor preferably made of a net are sprayed with alcoholic water while being transferred through a spray box with an entrance and exit as small as possible. The excess alcoholic water sprayed out of the cakes is recovered in a pan on the bottom of the conveyor and reused. While the cakes having passed through the spray box are dried incompletely and stored in a sealed airtight waterproof container made of plastic, etc. Alcoholic water with an alcohol content of about 1W85wt%, especially 5W80wt% is preferably used as the alcoholic water. Cakes using cheese or cream cheese may be cited as the cakes.
