Abstract:

PURPOSE: To prevent deformation, generation of hollow and crack and to improve adhesivity, by forming a water-containing coating main layer with a specific water content on a food ingredient as a nucleus, making a water- containing coating surface layer with specified water content on the surface of this water-containing coating main layer.

CONSTITUTION: The water-containing coating main layer B consisting of an ingredient with 55W25wt% water content, containing grain such as wheat flour, soybean powder, etc., saccharide such as sugar, glucose, etc., and sweetener, fats and oils, egg, gelatinizing agent, spices and the all or part of other food additives is formed on the food ingredient A as a nucleus. The water-containing coating surface layer C with 40W85wt% water content, consisting of the same material as that of the main layer B, thinner than the main layer B, is made on the water-containing coating main layer B. Consequently, the water-containing coating surface layer C is solidified during thermal expansion of the water- containing coating main layer B, it forms a wall around the water-containing coating main layer, inner pressure is produced in the water-containing coating main layer B, adhesivity of it to the food ingredient A is improved, and occurrence of hollow is prevented.
