Abstract:

PURPOSE: To prepare a mild concentrated grape juice having a high saccharide degree, a strong aroma and a high viscosity by repeatedly freezing and thawing a grape juice under the utilization of the natural atmospheric temperatures in the winter.

CONSTITUTION: A grape juice prepared by pressing and filtering high saccharide grapes haw ested from the last ten days of October to November when the falling of late frost is frequent is repeatedly frozen and thawed as in the natural phenomena in the winter while removing the frozen portions, thereby providing a grape juice having a high saccharide degree.
