Abstract:

PURPOSE: To obtain a difficultly digestible starch reduced in discoloration and odor caused by heating and also in monosaccharide and olignosaccharide contents readily in a high yield by effecting a wet heat treatment of starch at a low temp. for a short period of time.
CONSTITUTION: Starch is subjected to equilibrium adsorption thereon of an inorg. acid in an amt. of 0.03 to 0.1% (w/w) based on starch. The resulting acid-treated starch is subjected to a wet heat treatment at 130 to 140°C while keeping the moisture content thereof on a level of 3 to 7% (w/w).
