Abstract:
PURPOSE: To produce an embryo paste having characteristic fragrance of embryo and excellent spreadability, and suitable to spread on break, by kneading roasted embryo with fluid shortening, and pulverizing the embryo to fine particles.
CONSTITUTION: Roasted and optionally crushed embryo is mixed with fluid shortening preferably having a solid at fat index (SFI) of ≤25 at 0°C and 3W 10 at 30°C at a weight ratio of 5:95W70:30, and kneaded if necessary together with one or more additives such as seasonings, flavors, emulsifiers, antioxidants, etc. until the embryo is pulverized to ≤80μ.
