PURPOSE: To prepare the titled bean paste (MISO) having excellent taste and flavor, by heating low-salt MISO to sterilize yeasts, cooling the MISO, and kneading homogeneously with specific amounts of butter or margarine, seasoning, sugar, liquor, food oil, etc.
CONSTITUTION: A low-salt MISO having a salt-content of 5W9% is heated at 52W65°C to sterilize the most part of the yeasts. The heat-treated MISO is cooled to 15W45°C, and mixed homogeneously with 50W150pts.wt. of butter or margarine, based on 100pts.wt. of the MISO, and other additives such as seasoning, sugar, liquor, food oil, etc. to coat the particles of MISO with butter or margarine, and obtain the objective MISO having the taste and flavor of butter. The obtained MISO has excellent preservability, and gives unique taste and flavor consisting of those of the butter and the fragrance of roast MISO by toasting the MISO applied to a piece of bread.
