Abstract:

PURPOSE: To prepare a filmy food having high nutrient value and excellent taste and flavor, by mixing at least one of cream, butter, margarine and cheese uniformly with a separated soybean protein and water, forming the mixture in the form of a sheet, and heating the sheet.

CONSTITUTION: (A) At least one of cream, butter, margarine and cheese is mixed uniformly with (B) a separated soybean protein and (C) water. The amount of each component is selected to give a weight ratio of (the component B in terms of anhydride)/(the whole fat content in the component A) of 0.8W3.5 and the sum of the components A and B (in terms of anhydride) of 8W50wt% based on the whole composition. If necessary, the composition may be further compounded with beans, cereals, vegetables, meat, egg, yam, etc. The obtained homogeneous mixture is formed in the form of a film having a thickness of 0.1W2mm e.g. by casting or rolling on a flat plane, and heated at about 90W110°C to obtain the objective filmy food.
