Abstract:

PURPOSE: To prepare a fish paste product having high jelly strength, by concentrating albumen with a semipermeable membrane, and using the concentrated albumen as a reinforcing agent.

CONSTITUTION: Concentrated albumen obtained by using a semipermeable membrane such as cellophane film, silicic acid membrane, etc., e.g. concentrated to about 1/1.5W1/2.5 of the weight of the raw albumen liquid is used as a reinforcing agent in the preparation of a fish paste product by conventional method. The amount of the concentrated albumen is about ≤5wt% based on the whole raw materials.
