Abstract:

PURPOSE: To prepare high-quality pasty flour pastes easily cuttable with a spatula, easily handleable and meltable in the palate, without using the cooking with heat, by pressurizing a raw material mixture and cooling the treated product.

CONSTITUTION: A raw material mixture composed mainly of wheat flour and starch is charged in a charging tank by conventional method and preliminarily heated at about 40W70°C under agitation. The space in the tank is pressurized to about 500W1,500kg/cm2 with a high-pressure plunger pump, etc., to gelatinize the raw material mixture. The treated mixture is returned to the normal pressure and cooled.
