PURPOSE: To prepare inexpensively a food additive useful as a seasoning ingredient, having no reduction in quality even by long-period preservation, by crushing an animal, fish, shellfish, etc. and its bone, treating the prepared material specifically.
CONSTITUTION: (i) An animal, fish, shellfish, etc. and its bone is crushed into pieces ≤about 10mm square, and boiled with water so that the pieces are separated into a solid component, an aqueous solution of protein, and an oily component. Then, (ii) the solid component is compressed or centrifuged to remove water and the oily component, and dried to give a dried solid component. Meanwhile, in the aqueous solution of protein, protein is optionally decomposed with an enzyme, water in it is evaporated at about 60W70°C under vacuum to give a concentrated solution with about 40wt% water content. Then, (iii) the dried solid component is blended with the concentrated solution of protein, dried and ground into about 200W300 meshes to give a food additive.
