PURPOSE: To obtain food and drink having no floating or agglomerated aggregate, by emulsifying or dispersing a fat-soluble vitamin into a gelatinizing agent- containing sol, adding particles consisting of gelatinized fat-soluble vitamin- containing gel into food and drink.
CONSTITUTION: A fat-soluble vitamin such as vitamin A, D, E, F, etc. is emulsified or dispersed into sol containing a gelatinizing agent such as carrageenan, etc., and particles consisting of gelatinized fat-soluble vitamin-containing sol is added to food and drink. Consequently, since the fat-soluble vitamin added to the food and drink is sealed in the gel, it will not become floating or agglomerated aggregate, and it will neither provide unpleasant feeling nor have fear of attaching to the inner wall of container. Further, the fat-soluble vitamin will neither float nor come into contact with air. Since it is shielded by the gel layer, change in quality by oxidation is prevented, and storage stability is improved.
