Abstract:
PURPOSE: To product an algae product having excellent preservability even at a low salt concentration and keeping fresh green color for a long period, by heat- treating algae in an alkaline solution of 9W12pH.
CONSTITUTION: Raw laver or other algae is heat-treated in an alkaline solution of 9W12pH, preferably 10W11pH, e.g. solution of sodium carbonate, sodium phosphate, etc., and preferably the treated product is salted.
