Abstract:

PURPOSE: To prepare a food having excellent flavor and capable of keeping the flavor components even under heating, by heating a mixture of green coffee beans and edible oils or fats.

CONSTITUTION: 100pts.wt. of green coffee beans are mixed with 30W200pts.wt., pref. 60W120pts.wt. of edible oils or fats, and ≥0.1pts.wt. of a surface active agent. The mixture is crushed with a wet crusher or a freeze crusher until the particle size of the green coffee bean becomes ≤2mm, and heated at 100W250°C, pref. 150W220°C in inert gas stream until the water-content of the coffee beans becomes 0.5W5%, pref. 1W3%.
