Abstract:

PURPOSE: To obtain the titled food, etc., advantageously on an industrial scale, by adding a water-containing food or drug added with an alkali or alkaline earth metal ion to an aqueous sol of a colloidal material and reacting the components with each other.

CONSTITUTION: A frozen material (A) is produced by adding (a) a substance for forming an alkali or alkaline earth metal ion, e.g. calcium lactate, MgCO3, K3PO4, sodium citrate, etc., to (b) a food or drug containing ≥20wt% water and used as an object to be coated and freezing the mixture at -20W-30°C. The component A is added to (B) an aqueous gel system produced by adding (c) ≤2wt% one or more colloidal materials selected from carrageenan, pectin, gelan gum, xanthan gum and locust bean gum to (d) (alcoholic) water. The component (c) reacts with the above ion at the surface of the component A to form a gelled product and give the titled food.
