Abstract:

To obtain a wide range of a sugar base cake having a solid ratio suitable for mold forming.

This method for producing a cake comprises a stage for dissolving a cake base raw material to prepare a slurry of cake base and a stage for adding the slurry to a first high-temperature surface having a first temperature, scratching off an applied material at a required final solid ratio or lower than it, then transferring the slurry to a second high-temperature surface preferably having a second temperature higher than the first temperature, scratching off a concentrated material until a given solid ratio level is reached so as to concentrate the slurry of the cake base. This method economically and cleanly produces a wide range of cakes while avoiding a problem related to an excessive viscosity occurring during cooking.
