Abstract:
PURPOSE: To obtain a frozen boiled rice for chahans (a Chinese dish of fried rice) capable of being thawed readily, having swelled and glutinous appearance and satisfactory taste, by impregnating a raw rice with oil, preparing boiled rice, followed by freezing.
CONSTITUTION: A raw rice is washed with water, soaked in water for a given time, water is removed, and the rice is impregnated with edible oil to give a rice wherein the surface of rice particles is covered with oily film. The prepared rice is boiled conventionally, cooled preliminarily to 40W50°C, and frozen by a well-known freezer.
