Abstract:

PURPOSE: To prepare a fruit cake containing a prescribed amount of alcohol and having excellent taste and flavor by immersing a dried fruit in an aqueous solution of alcohol to decrease the solid content, using the treated fruit as a core and covering the core with an outer layer composed of chocolate, sugared bean jam, etc.

CONSTITUTION: Dried fruit such as dried grape, plum, banana or apricot is immersed in an aqueous solution of alcohol (e.g., Japanese rice wine or whiskey) top decrease the solid content of the dried fruit. The treated fruit is used as a core and covered with an outer layer composed of chocolate, a chocolate-like cake, custard cream, sugared bean jam, shellac, jelly, etc., to obtain an alcohol- containing fruit cake in stable state.
