PURPOSE: To obtain a grain cake good for health, by processing grain such as unpolished rice, adlay, etc. to the state suitable for the cultivation of fermentation microorganisms, making malted grain, and forming the grain to a round cake after steaming of boiling.
CONSTITUTION: Unpolished rice and other crushed grain are immersed in mineral water, drained, and cultured with aspergillus by conventional method. As an alternative method, the drained grain mixture is boiled in a pressure cooker together with 60W70wt% of mineral water based on the grain, allowed to cool, and cultured with aspergillus by conventional method. The resultant malted grain is charged into a pressure cooker, and boiled in the presence of 50W60wt% of water based on the malted grain. The boiled product is taken out of the cooker and pounded thoroughly in a mortar. A seasoning and linoleic acid oil or fat is added to the malted grain during pounding or is used in place of hand- wetting water. The obtained grain cake is rich in yeast and good for health.
