Abstract:

PURPOSE: To obtain a healthy food having improved nutritive value, taste, appearance, shelf stability, etc., by adding honey to an extracted solution of dried Shiitake(mushroom) with water water.

CONSTITUTION: Shiitake(mushroom) is dried by the sun, etc., the prepared dried Shiitake is processed into small pieces or powder, blended with water, heated with stirring, extracted with warm water. The extracted solution is concentrated in such a way that components are not precipitated, to give brown, transparent, viscous solution. About 100g honey based on 15g Shiitake is added to the viscous solution, and, if necessary, the solution is blended with seasoning, thick malt syrup, agar, etc., to give the desired healthy food.
