Abstract:

PURPOSE: To prepare an instant food having excellent preservability and capable of being quickly reconstituted with hot water to give a food having excellent taste, palatability and appearance.

CONSTITUTION: Food raw materials such as vegetables, meat, fish and shellfish are made to be edible by cooking, dried to a water-content of ≤20% (preferably ≤5%) and moisture-conditioned to get an Aw value of 0.5-0.95.
