Abstract:
PURPOSE: To prepare a jam by using yacon which is a useless vegetable.
CONSTITUTION: Yacon is treated with a vitamin C solution to remove the harshness of the vegetable, finely grated, added with water, mixed with a sweetener (sugar), starch syrup, lemon juice and flavor and boiled down under stirring to obtain the objective jam.
