Abstract:

PURPOSE: To decrease the lipid content of a lipoprotein-containing liquid substance while keeping the nature of the substance and to apply the process to a food

CONSTITUTION: A substance containing lipoprotein is treated with at least one kind of enzyme selected between a proteinase and lipase and the treated substance is brought into contact with a subcritical or supercritical fluid to extract lipid. The extracted lipid is separated from the fluid to obtain a lipoprotein- containing substance having decreased lipid content. A food is prepared by using the treated substance as a component.
