Abstract:
PURPOSE: To prepare a liquid seasoning not changed in the taste ingredient contents by filtering a liquid seasoning with a cross flow filter medium having a specific pore size, filtering the concentrated solution thereof with a filter medium heating the filtrate and subsequently mixing the filtrate with the filtrate filtered with the cross flow filter medium.
CONSTITUTION: A liquid seasoning (e.g. soy sauce, dried bonito extract solution or sea tangle extract solution) is cross flow-filtered with a filter medium (e.g. ceramic or teflon), concentrated, filtered with a filter medium and subsequently heated. The filtrate with the filter medium is mixed with the filtrate with the cross flow filtering to provide the objective seasoning.
