Abstract:

PURPOSE: To provide a process for preparing a long-chain inulin containing no short-chain component while simultaneously obtaining glucose and fructose from a plant extract.
CONSTITUTION: An aqueous crude inulin suspension with 20-70 wt.% crude inulin concentration is subjected to enzymatic treatment with a hydrase at a temperature of 30-70°C. During the process, short chain components are degraded to mono- or disaccharides, and the long-chain inulin is separated from the mono- or disaccharides and converted into a dry form in the process for preparing the long-chain inulin. The use as a foodstuff, a diet material and a carrier for a medicine of the obtained long-chain inulin is also provided.
