Abstract:

PURPOSE: In preparing a roasted cake using a large amount of malt of rice, wheat, etc., to obtain the roasted cake slightly causing deterioration resulting from malt, by using the malt from which more than half of tocopherol homologues are removed

CONSTITUTION: In preparing a roasted cake containing malt of rice, wheat, etc., malt from which more than half, preferably 60W90wt.% tocopherol homologues contained in malt are removed is used as a raw material.
