Abstract:

PURPOSE: To enable the low-temperature filling of a pasty food, and to produce a multi-layer pasty food having high stability and quality, by filling a pasty food containing low-methoxyl pectin and a pasty food containing alkaline earth metal ion alternately in a container in the form of a laminate.

CONSTITUTION: (A) a pasty food layer containing low-methoxyl pectin, adjusted to >3.5pH and exhibiting fluidity at 5°C and (B) a pasty food layer containing sufficient amount of alkaline earth ion to deprive the layer (A) of the fluidity when contacted with the layer, are filled in a container alternately in the form of laminate, and left at rest to obtain the objective multi-layer food.
