PURPOSE: To obtain an oil-fried food which can be easily reconstituted with hot water, and is suitable especially as an ingredient of instant noodles, by mixing dried bean curd refuse with batter of wheat flour, and frying the mixture in oil first at high temperature and then at low temperature.
CONSTITUTION: A mixture of wheat flour and dried bean curd refuse is mixed with water and if necessary with baking powder to obtain batter, which is fried in oil first at 190W220°C and then at 130W180°C. The dried bean curd refuse has a water-absorption of ≥6 times, preferably ≥7W8 times, and its amount is 1W30wt%, based on the wheat flour. The amounts of water and baking powder are about 1.7W5 times the solid content of the mixture and 2W6wt% of the wheat flour, respectively.
