PURPOSE: To obtain a packed bean curd free from syneresis, giving smooth and excellent feeling to the palate, and suitable especially for the use of a quick- acting coagulant, by adding a coagulant to an aqueous solution such as soya milk, etc., and homogenizing the mixture within a specific period.
CONSTITUTION: A coagulant and preferably a coagulation retardent (e.g. sodium pyrophosphate) are added to soya milk or an aqueous solution of separated soybean protein, and the mixture is homogenized within 30min (preferably within 2secW10min) using a pressure-type homogenizer under a homogenization pressure of preferably 50W700kg/cm2. The homogenized product is filled in a packaging container, sealed, and thermally coagulated to obtain the objective bean curd.
