PURPOSE: To separate and collect a polysaccharide, by bringing a mycelium obtained by cultivating a strain belonging to the genus Grifola into contact with a solution of a glucide under stirring in a region of a given acidity.
CONSTITUTION: A strain, e.g. Grifola frondosa IFO 4911 or 7040, belonging to the genus Grifola is inoculated into a natural or synthetic culture medium by the conventional method and cultivated aerobically to separate and collect the resultant mycelium. The mycelium is then washed with sterile water, suspended in sterile water to frozen, stored, if necessary thawed, and added to a solution of a glucide. Arabinose, xylose, fructose or glucose is used as the glucide, and the suspension of the mycelium of the genus Grifola is mixed with the solution of the glucide to carry out the reaction in an acidic region at 3W4.5pH under stirring. After the completion of the reaction, the mycelium is separated, and the liquid part is mixed with an organic solvent to precipitate the resultant polysaccharide. The mycelium is then reutilized.
