Abstract:

PURPOSE: To preserve taste and quality of root vegetables for a long period of time and reduce preserving place and transporting cost by heat treating peeled root vegetables, shaping to a board-like block, packing in sealing and freezing.

CONSTITUTION: Peeled and water-washed root vegetables such as potato or sweet potato is subjected to heat treatment. Next, plural pieces are received in a pressing frame. Pressing under static load compressing air volume in gaps existing between adjacent root vegetables to 10-40% is performed and shaped to a boardlike block. Whole of the blocks is packed with sealing in a synthetic resin film, etc., and frozen to prepare the aimed preserving root vegetables.
