Abstract:

PURPOSE: To obtain a raw wheat gluten which can be made easily into self- made wheat gluten, or wheat gluten having unique taste, one's favorite taste or salty taste, by adding salt, sugar and vegetable oil and fat to starch syrup, boiling down and granulating the mixture, and sealing the granules in an aluminum foil bag.

CONSTITUTION: Starch syrup is added with small amounts of sugar and salt, and vegetable oil or fat for the stabilization of the product, and is boiled down in a pot under stirring. The obtained wheat gluten is cooled to a soft solid, and granulated by passing through rollers or press. As an alternative method, the boiled down starch syrup is poured in a mold before solidification, and cooled to obtain granules. The granular starch syrup is put into an aluminum foil bag, and sealed to obtain the objective raw wheat gluten. The use of the raw wheat gluten is as follows: the aluminum foil bag containing the gluten is put in hot water and boiled for several minutes. The top of the bag is opened, and the content is seasoned to the favorite taste, taken out of the bag, and cooled. The solidified gluten is cut to a proper size to obtain a wheat gluten having desired taste.
