PURPOSE: To prepare the subject dough free from fish-eye, having excellent appearance, taste and quality and suitable for French roll, etc., by treating divided or formed bread dough under specific condition.

CONSTITUTION: This bread dough is prepared by leaving divided or formed bread dough to stand at 15-28°C (preferably 18-25°C) for 10-40min and refrigerating or freezing the dough.
