PURPOSE: To prepare the titled food having good flavor, by mixing corn grits, rice flour, corn starch, a foaming agent, water, etc., steaming and kneading the mixture, rolling to a sheet, embossing grooves to a surface of the sheet, and drying and roasting the product.
CONSTITUTION: 50W75% corn grits, 5W10% rice flour, 5W10% corn starch, 10W 25% α-starch, and proper amounts of a seasoning such as natural sweetener, salt, etc., a foaming agent and water are mixed together, and the mixture is steamed and kneaded for 7W30min to obtain a glutinous product, which is rolled with a roller to a sheet of 1.2W3.5mm thick and dried. Grooves 1 having a depth of 1/3W1/2 of the thickness and a width of 0.8W1.5mm are embossed to one surface of the sheet. The sheet is then cut and dried to obtain a pastry sheet 2 having a water-content of 13W18%. The formed pastry is dried with a toaster to a water-content of 10.5W12.5%, and roasted with a roaster to obtain the objective snack food 3.
