PURPOSE: To prepare good salted salmon roe from the fresh and clean ovarium of a salmon or trout as a row material by choking the living salmon or trout, taking out blood from the body of the salmon or trout before the coagulation of the blood, separating the ovarium and subsequently salting the ovarium.

CONSTITUTION: A living salmon or trout is choked, and blood is taken out from the body of the salmon or trout including the ovarium thereof before the coagulation of the blood. The abdormen of the salmon or trout is opened with a knife to take out the ovarium thereof, followed by salting the ovarium to prepare the objective salted salmon roe.
