Abstract:
PURPOSE: To provide low salt and/or low phosphate and/or low fat and/or high moisture sausage by processing and heating later meat batter under specified hydrostatic pressure. CONSTITUTION: A casing is filled with the meat batter prepared from meat, additive fat, ice and nitrite curing salt, processed under hydrostatic pressure from 500 to 400 bars and heated later. The low salt, low phosphate, low fat and/or high moisture sausage, with which the hardness of texture is enough and heating yield is satisfactory, can be provided.
