Abstract:
PURPOSE: To prepare a highly nutrient sesame-containing tofu having improved palatability, by adding a mixture of ground black sesame and pure sesame oil to soybean milk before adding a coagulating agent to it.
CONSTITUTION: Soybean milk is blended with a mixture of roasted ground black sesame and pure sesame oil, stirred, a common amount of a coagulating agent is added to the soybean milk and coagulated.
