PURPOSE: To prepare a smoked cheese sheet having the taste and flavor of smoke extending throughout the cheese by thermally sterilizing molten process cheese prepared by conventional process, filling the cheese in a bag-shaped casing material for smoking, rolling the cheese together with the casing material and smoking the cheese.
CONSTITUTION: Molten process cheese prepared by conventional process is sterilized by arbitrary direct or indirect heating. The sterilized molten process cheese is filled in a bag-shaped casing material for smoking composed of preferably collagen. Air in the bag is removed, the filling opening of the bag is sealed and the bag is rolled as a whole with a press roller to a thickness of usually about 3-4mm. The rolled product is smoked under conventional smoking condition, i.e., at 30-40°C for 4-6hr. The smoked cheese sheet prepared by the above process is marketed as it is or after cutting to an arbitrary shape.
