PURPOSE: To prevent the lowering of the beatability of concentrated liquid egg white, by adding sugars, condensed phosphoric acid salts, and powdered bile to concentrated liquid egg white, and sterilizing the mixture by heating.
CONSTITUTION: 1pt.wt. of concentrated liquid egg white of a concentration ratio of 1.5W3 times (i.e. the concentration of solid in the concentrate is 1.5W3 times the concentration in original egg white), is mixed with 0.5W2pts.wt. of sugars (sugar, granulated sugar, liquid sugar, etc.), 0.001W0.005pt.wt. of condensed phosphoric acid salt (e.g. sodium polyphoshate, potassium polyphosphate, sodium metaphosphate, potassium metaphosphate, sodium pyrophosphate, potassium pyrophosphate, etc.) and 0.0005W0.005pt.wt. of powdered bile, and sterilized by heating at about 60W70°C for about 5W30min to kill the bacteria in the liquid egg white, e.g. colon bacilli, salmonellas, etc.
