Abstract:

PROBLEM TO BE SOLVED: To provide a preparation process of a sugar-like aroma component which imparts smoothness to beverages or aroma compositions and retains its aroma even when diluted thousands times.
SOLUTION: From 1.5 to 3 pts.wt. ion-exchange water and from 0.02 to 0.05 pts.wt. ethanol against 1 pts.wt. molasses are introduced into a feed tank, stirred, mixed and thoroughly dissolved. The obtained solution is introduced into a counter-flow contact system (SCC) and treated under a condition wherein the temperature inside the column is from 40 to 60°C, the stripping ratio is from 0.5 to 7% and the vacuum degree is from 70 to 100 kPa.
