Abstract:

PURPOSE: To improve the protein recovery and solid recovery, and to obtain sunflower milk having improved palatability, by adjusting the pH of the system to neutral state during or after the pulverization of sunflower seeds in the presence of water.

CONSTITUTION: Sunflower seeds or a mixture of sunflower seeds and other oil seeds such as soybean, peanut, sesame, etc. is used as the raw material, and pulverized in the presence of water to obtain seed milk. In the above process, the pH of the system is adjusted to 6.5W7.5 during and/or after the pulverization. The protein recovery and the solid recovery are improved, and seed milk having improved palatability can be obtained by this process. When the sunflower seeds are soaked with water before pulverization, the amount of chlorogenic acid reacting with protein and causing the green discoloration of the milk can be minimized.
