Abstract:

PURPOSE: To prepare a textured protein food having meat-like palatability from soybean protein and to enable the preparation of textured protein foods having various sizes and shapes.

CONSTITUTION: The objective textured protein food is prepared by kneading at least hydrated powdery soybean protein and textured and/or fibrous soybean protein, forming the kneaded mixture, denaturating the formed material with heat and freezing the product to effect the freeze denaturation of the formed product.
