Abstract:

PURPOSE: To prepare a food such as TOFU (bean curd) steak having smooth texture and high springiness and free from crumbly feeling by adding a coagulant to a soya milk, dehydrating and grinding the obtained coagulum to a paste, adding an alkaline agent to the paste and heat-forming under a specific pH condition.

CONSTITUTION: A coagulum produced by the addition of a coagulant to a soya milk is dehydrated and ground to form a paste. The pH of the paste is adjusted to ≥6.5 by adding an alkaline agent before, after or simultaneous to the grinding treatment. The paste is formed by heating at pH6.5-7.0 to obtain the objective food.
