Abstract:

PURPOSE: To obtain a high-quality vegetable protein, by treating the extraction flake of an oleaginous raw material with an aqueous solution of ethanol, dispersing the obtained defatted oleaginous raw material in water, ejecting the slurry through an orifice under pressure, and forcing to flow in a pipe line.

CONSTITUTION: The extraction flake of an oleaginous raw material such as soybean, rapeseed, cottonseed, peanut, sesame, sunflower, corn, wheat, etc. is brought into contact with an aqueous solution of ethanol having a concentration of ≥90wt% to extract the oil and fat and obtain a defatted oleaginous raw material. The defatted material is dispersed in water to obtain an aqueous slurry having a concentration of 4W20wt%, and the slurry is ejected through an orifice into a pipe line under pressure. Subsequently, the slurry is forced to flow through said pipe line at ≤150°C. The water-soluble nitrogen index of the protein in the raw material can be regenerated by this process, and a treated slurry giving various protein products having excellent gel characteristics can be obtained.
