Abstract:

PURPOSE: To obtain seasoning vineger capable of preventing the aging of SUSHI rice and keeping its original taste, by adding a sugar alcohol or a fatty acid ester to mixed vinegar.

CONSTITUTION: Vinegar is incorporated with salt, surgar and chemical seasoings to obtain a mixed vinegar. The mixed vinegar is further mixed with a sugar alcohol such as sorbitol, maltitol, xylitol, mannitol, etc. or a fatty acid ester such as sucrose faty acid ester. The amount of the sugar alcohol and the fatty acid ester is ≥0.1wt% (especially 1W10wt%) and 0.01W1wt% (especially 0.05W 0.5wt%) based on the mixed vinegar, respectively.
