Abstract:

PURPOSE: To select always improved acetic acid bacteria, and to prepare vinegar having good flavor and constant quality, by sprinking lyophilized acetic acid molds on the surface of raw material wax, starting acetic acid fermentation.

CONSTITUTION: Since acetic acid fermentation is started by sprinkling lyophilized acetic acid molds on the surface of a liquid, improved acetic acid bacteria are always selected and can be used. Since active seed vinegar is not required, the whole amount of fed solution can be sterilized, and an acetic acid bacteria film can be rapidly extended on the surface of the liquid. Therefore, vinegar having good flavor and constant quality free from contamination with various bacteria can be prepared. Since the lyophilized acetic acid molds are preservable for a long period and portable easily, vinegar is easily obtainable efficiently at a place where vinegar has never been prepared.
