Abstract:

To provide a widely applicable, effective method for preserving foods with the aid of a small quantity of antimicrobial agent, to prevent the foods from deterioration or decay by bacteria or yeasts.

This method seals a food, incorporated with at least one type of fatty acid ester selected from the group consisting of fatty acid monoglyceryl esters (e.g. caprylic acid monoglyceryl ester) and fatty acid diglyceryl esters (e.g. myristic acid diglyceryl ester), in a bag or container which permeates essentially no oxygen, together with a deoxidant.
