Abstract:

PURPOSE: To prevent the degradation of a food caused by true fungi, by sealing a food in an impermeable container together with a disoxidation agent and optionally a CO2-absorbent or an alcohol generating agent, and keeping the oxygen concentration in the container below a specific level.

CONSTITUTION: A food is sealed in an impermeable container together with a disoxidation agent (e.g. iron powder, ascorbic acid, etc.), or a disoxidation agent and a CO2 absorbent (e.g. zeolite impregnated with calcium hydroxide), or a disoxidation agent and an alcohol generating agent (e.g. zeolite impregnated with ethyl alcohol). The growth of true fungi can be suppressed and the food can be stored safely by keeping the oxygen concentration in the container to ≤10ppm. When the oxygen concentration in the container is maintained to ≤10ppm only by the use of a disoxidation agent, it is necessary to substitute the container with an inert gas and packaging the container with double packages, or to use the disoxidation agent in large excess.
