Abstract:

PURPOSE: To provide a method for preserving a tastily edible perishable food (fishes and shellfishes and sea algae) without damaging flavor of the perishable food.
CONSTITUTION: This method for preserving a perishable food comprises mixing natural yeast with one of bread crumb, a starch, bean-curd refuse, bran, (wheat) bran, rice bran, etc., or a blend of two or more of them, fermenting the mixture, drying the fermented material to prepare a powdery or granular natural yeast fermented dried material, blending the natural yeast fermented dried material with a perishable food and salt and dehydrating the blend at a low temperature.
