Abstract:

PURPOSE: Flakes of dried bonito is stored in an oxygen-free atmosphere to keep fresh color, smell and taste just after flaked, thus preventing inexpensively and simply the deterioration.

CONSTITUTION: Flakes of dried bonito and an oxygen absorber, such as a combination of an alkali and gallic acid, pyrogallol, catechol, resorcin or glucose or another combination of iron powder and silicic acid, alum or ferrous sulfate, are charged in tightly sealing vessels of not permeating oxygen or packing pouch made of film of oxygen barrier property as polyvinylidene chloride film, or polyvinylalcohol- polyethylene copolymer film so that the oxygen content in the package is kept less than 140ml/100g of the flakes.

EFFECT: In spite of high water content as much as over 14%, the growth of mildew is prevented and flakes with good taste is stored for a long time.
